You would think that after baking the same cake enough times, you would know exactly how it is going to turn out.

I thought so too.

But I still taste my cakes.

Sometimes it is just a tiny piece. Sometimes it is a proper bite because, well, I'm standing in a kitchen full of cake.

The reason is simple. A recipe can be the same and the cake can still turn out slightly different.

The chocolate may taste different. The weather can change the way things behave. The oven may heat a little differently. The cream may not whip exactly the same way. Even a small change in sweetness can make a difference.

And then there are days when I make something and think, Something is missing.

It may look perfectly fine.

But when I taste it, I know.

Maybe it needs a little more chocolate. Maybe the sweetness needs balancing. Maybe the texture isn't quite where I want it.

That is one thing baking has taught me. You can't always trust how something looks.

A cake can be beautiful and still need work.

And I don't think being experienced means you stop checking your work.

If anything, I think you become more particular.

So yes, I still taste my cakes.

Not because I don't trust my recipes.

Because I don't want to send something out of my kitchen without knowing exactly what I'm putting into someone's box.

And, if I'm being completely honest, there are worse parts of the job than having to taste cake.
