In a world where speed is celebrated, doing everything by hand may not seem like the smartest business decision.
There are machines that can mix faster, bakeries that can produce hundreds of cakes a day, and systems that promise to make the process quicker and easier. Sometimes I wonder if life would be simpler if I chose that path.
But every time I step into my kitchen, I find my answer.
I still bake every cake myself because baking has never been just about the finished product. It's about the process.
It begins long before the oven is switched on. It starts with reading a customer's message, understanding the occasion, imagining the colours they'll love, and deciding which flavours will bring the biggest smile. By the time I begin measuring ingredients, the cake already has a story.
There's something deeply satisfying about creating from scratch. Watching butter and sugar turn light and fluffy, folding batter carefully, waiting for the cake to rise, filling each layer, and finally adding those last details that make every cake feel unique.
These are the moments I enjoy the most.
Could someone else do them? Of course.
But they wouldn't do them the way I would.
Every baker develops small habits that become part of their signature. The way they smooth cream, the amount of filling between layers, the tiny adjustments they make based on the weather, or the instinct they develop after baking the same recipe hundreds of times. Those details aren't written down anywhere. They come from experience, and they're difficult to hand over.
Baking every cake myself also keeps me connected to my customers.
When someone tells me they loved the chocolate sponge or that the frosting was just the right amount of sweet, I know exactly what they're talking about because I made it. When I receive constructive feedback, I know where I can improve because I was part of every step.
Of course, there are busy days when the orders pile up and the hours feel too short. There are moments when I question whether doing everything myself is sustainable. But then I remind myself why people choose a home bakery in the first place.
They aren't just looking for a cake.
They're looking for something that feels personal.
Every cake that leaves The Bittersweet Palate should still feel like it was made for one person, one family, and one celebration. Freshly baked, thoughtfully crafted, and never treated as just another order.
Because that's what home baking has always meant to me.
